How should I prepare fresh food before freezing it?
Freeze only fresh and undamaged food. Food which is boiled, fried, or baked is more suitable for freezing than raw food. Before freezing, prepare the food appropriately: vegetables should be washed, chopped, and blanched; fruit should be washed, pitted, and possibly peeled, with sugar or ascorbic acid solution added if desired. Pack food airtight in suitable packaging such as plastic film, freezer containers, or aluminum foil to prevent freezer burn and flavor loss.
