What type of fuel should I use and how much?

Choose your preferred hardwood and pile a small amount of charcoal (15-20 pieces) in the center of the wood/coal rack, then add Cajun Smokers premium cooking wood. Never completely fill the fire box; do not exceed 1/3 of its space. When the fire begins to die, add more premium cooking wood to maintain cooking temperatures.
