Can I add dishes after the dishwasher has started?

Yes, you can add dishes any time during the RINSE HOLD cycle. With other wash cycles, you can add dishes at any time before the main detergent wash portion of the cycle begins. Push the door latch to the left to stop washing, wait a few seconds for the water to calm, add your dishes, then close the door and push the latch to the far right to continue.
