What are the different system settings I can choose?

You can select Heat (heating only), Cool (cooling only), Off (both systems off), Auto (automatically selects heating or cooling), or Em Heat (Emergency and Auxiliary Heat for heat pumps with auxiliary heat, with compressor locked out). (Page 8)
