How do I check and reset the minimum and maximum recorded temperatures?

Wake the controller and press the High/Low button to cycle through the maximum and minimum temperatures for both probes t°1 and t°2. To reset, press and hold the High/Low button until 'CFП' (Confirm) flashes on the display, then press and hold again until the screen returns to normal — this clears both min and max values for t°1 and t°2. The Green Book guidance recommends checking and recording these values daily. (Page 20–21)
