What is carry-over cooking and why is it important?

Carry-over cooking is when meat continues cooking after you remove it from the oven. Transfer meat to a plate immediately after cooking completes and allow the protein to rest for 5 minutes before serving. Skipping this step and cutting into food right away may result in a rarer level of doneness than desired.
