What should I do with a partially full load of dishes?

If you do not have a full load or do not want to run the dishwasher immediately, run a "Rinse and Hold" or "Rinse Only" cycle (on some models) without detergent to keep the dishes moist and eliminate odor build-up. Run this cycle every 24 hours until you have a full load, and then run a complete cycle.
